Worked from home so I had myself a little matcha chia seed pudding! I jumped on the chia seed pudding bandwagon, I tried to use a recipe but it just didn’t work for me. Also my nails are on point, I cut them WITH nail polish on. Cause I’m not really into long nails but I had to see how long ones looked. Random thought how do women wipe their butts with long nails/acrylics? Don’t they fall off? Anyways…. So I dressed this baby up with some strawberry puree and fried bananas (which are absolutely out of the world!). Fry your bananas in really thick cut pieces for 1 minute on both sides, what you get is mushy banana that tastes like it’s bathed in honey BUT it didn’t, that’s the best part!
Matcha Chia Seed Pudding
- 2 tspn matcha powder
- 1/2 cup warm water
- 2 tspn water
- 2 cups milk
- 4 tspn powdered sugar (I’m obsessed with sugar, you can use honey)
- 1/2 cup chia seeds
Dillute your matcha powder and powdered sugar in the water and mix so you don’t have lumps. Add your matcha powder mixture to your milk. Whisk your chia seeds in 1/2 cup warm water. It’s easier for the chia seeds to plump up in warm temperature liquids. Add your chia seeds to your milk mixture. Let sit for 15-20 minutes and whisk again so you don’t have the seeds clumping in one spot.
Refrigerate overnight to set pudding. This recipe makes 4 servings. To assemble like I did, add 1/2 of the chia seed pudding to the bottom of a jar or glass, add the fried bananas, add some more chia seed pudding on top of the bananas and puree 2 strawberries and add to the top. This might seem bland but trust me don’t add anything to it because the fried bananas are so darn sweet, once you get to them you’ll think why did I sweeten this up??The caramelization on the bananas brings out their natural sugars!
