Ok ok it’s not really a strawberry cake but it’s filled with strawberry so it overpowers the cake. So it’s a strawberry monster cake. Alright so I promised one of my little cousins a pink cake with flowers, I wanted to make candied flowers to go on top of it but I’m not sure how to do that. Also I don’t know how to make cake either but there’s always a first for me. Also I was extremely upset about something this weekend so I needed to use my energy for anything besides sleeping and yelling, so I baked and it helped.
- 3 cups all purpose flour
- 3 cups cake flour
- 6 eggs
- 3 1/2 cups sugar
- 1/3 cup vegetable oil
- 2 sticks unsalted butter
- 2 tbsp baking powder
- 1 tspn salt
- 2 cups hot water
- 3 tspn vanilla extract
- Cooking spray
Preheat oven to 350 degrees. Spray a 9 inch round cake pan with cooking spray.Cream all wet ingredients and sugar in a stand mixer on low speed. Mix together all of the dry ingredients in a seperate bowl. Turn off the mixer. And fold your dry ingredients into the butter mixture. And then once folded in, mix in the stand mixer on medium speed to get rid of the lumps. I split the batter into 4 parts and baked 4 cakes (which was really dumb because I looked up a youtube video on how to frost a 2 layer cake and the lady baked a big cake and cut it in half….should’ve done that). Bake your cake for 25 minutes or insert a toothpick into your cake to see if it comes out clean, if it does, it’s done. Once done baking 2 cakes, set aside to cool.
- 1 lb strawberries hulled and cut in half
- 2 tbsp corn starch
- 1 cup sugar
- 1/2 cup water
- 4 drops red liquid food coloring
- 2 tbsp water
Heat up strawberries in 1 cup water and sugar in a saucepan on medium low heat. Let strawberries cook for 15-18 minutes on medium low heat. Once cooked down. Add cornstarch in a bowl in 2 tbsp water, mix till cornstarch has been completely dilluted in water. Add cornstarch mixture and mix strawberries for another mixture. Add food coloring till you have a bright red color to your strawberries. Take off stove and let cool.
Strawberry buttercream frosting
- 5-6 big strawberries
- 2 sticks softened unsalted butter
- 6 cups powdered sugar
- 3 drops red liquid food coloring
- 1 tspn vanilla
- 6 tbsp milk
In a stand mixer on medium speed mix powdered sugar, butter, vanilla, food coloring, and milk (so your powdered sugar doesn’t blow up in your face, it did on my walls….). Add strawberries and mix on high speed until you have a smooth frosting. Set aside.
Frosting Cake Your Cake
Cut your cake tops if you baked 4 cakes like me…..or cut cakes in half. Take one layer of cake and set on top of a doily or parchment paper, add buttercream on top, then add another layer of cake, on top of that layer add the strawberry filling, then add another layer of cake: add buttercream and then the strawberry filling on top of it and then add your last layer of cake. Crumbcoat your entire cake which means adding a thing layer of frosting all over the sides and top. Refrigerate your cake for an hour or freeze for 30 minutes till the frosting has set and it is easier to add your final layer of frosting (my baker cousin told me to do this or I would’ve had a hard time frosting). Frost with an icing spatula to get a smooth top and sides. I had macarons that I painted pink and added those on top of my cake, find the recipe for my macarons here.
